What is a real CHEESECAKE?

According to Barbara Ann Kipfer's The Culinarian: A Kitchen Desk Reference,

"Cheesecake is a dessert consisting of a layer of sweetened soft cheese mixed with cream, sugar, eggs, and flavorings and set in a cracker-crumb or pastry base." 
Basic ingredients: cream cheese, sugar, eggs, whipping cream, vanilla
(NO FLOUR AT ALL!!)

Technically, cheesecake is a pie or custard, not a cake at all. The texture of cheesecake is extremely rich and creamy, and the taste can range from sweet to highly tangy.

Cheesecakes can be broadly categorized into two basic types: baked with added eggs and unbaked with added gelatin.

It is typically served chilled, and may be topped with fresh fruit, glazes, or whipped cream. Allowing cheesecake to chill for a day will create a dessert with a rich, mature, complex flavor.

Lastly, when serving cheesecake, take it out of the refrigerator until it reaches room temperature. Use a long slicing knife dipped in hot water to keep the knife from sticking as you slice. Slice with long, smooth strokes. Finally, enjoy! And don't eat it all by yourself. Sharing is caring.
